Eating out | Spring at Somerset House

I don’t usually rush to a new restaurant the moment it opens. I have only a limited interest in the latest new hotspot. But, coincidentally, a few weeks ago at dinner with friends, we spoke about Skye Gyngell; about her cookbooks, about her previous restaurant, Petersham Nurseries, which I didn’t have the opportunity to visit while she was the chef. As the conversation migrated to her upcoming venture, in Somerset House, opening a few weeks hence, we were all excited to go.

I had not been to Somerset House since we moved to London last year, which means the last time I was there was to visit the Courtauld Gallery during a solo visit to London in my teens. That moment is my favorite memory of the trip, so stepping through the majestic building again rang of the past in a lovely, personal way. It was a good idea to meet before dinner for a glass of wine outside in the courtyard to savor the setting.

I own two of Skye Gyngell’s cookbooks and often leaf through them. I am invariably transported, intrigued and tempted, though I have only made very few of the dishes. Perhaps I am disconcerted by the idiosyncratic ingredients — one foot firmly settled in Italy while the other perambulates confidently through Asia — which make it hard for me to imagine the finished dish, to know where I am going. This should be thrilling; perhaps I play it a little safe in my own cooking. When I eat out, however, being surprised is exactly what I crave.

My first impression was to be disappointed by the familiarity of the menu. I was hoping for the spirited flavor combinations I have so long admired — and shyed away from — in the books. And so?

The starter was one of the best things I have eaten recently. I am still unsure how the combination of ‘Puntarelle and goat’s curd with mint and black olive dressing’ worked so well, but it was fresh, balanced and addictive in the most convincing way. I could happily have had just that all evening. Next, Slow cooked pork shoulder with girolles, daterrini, and polenta was predictable and a little disappointing, with nothing to elevate the flavors, no special zing. We shared desserts and I happily relinquished any claim to either the warm chocolate cake (you know me) or even Buttermilk pannacotta with damsons and wood sorrel, for yet another lunge at the Hazelnut and pear tart with creme fraiche and espresso — heaven.

The winter garden (pictured above), for smaller parties, holds most of the magic of the place. The main dining room is tall, light, feminine, and ultimately a bit bland. It reminded me vaguely of ABC Kitchen in New York, but lacking the lightness and playfulness which give that restaurant its irresistible charm. I don’t love the space.

Which brings me to the ultimate question: all things considered, am I impatient to go back? Unfortunately I must admit, despite some stunning dishes and, that evening, great company and a lovely night, not very. I realize it’s early days and one shouldn’t judge a restaurant on just one meal. But the place is a little too grand, the food not quite surprising enough — they seem out of sync. I imagine this meal in the lovely rickety setting of Petersham and can’t help but wish I hadn’t missed that. Luckily, I have the cookbooks, which I am now emboldened to try!

Green asparagus salad with parmesan shavings

When you grow up in France or Germany, asparagus is invariably white, steamed or gently boiled, and served with some variant of Hollandaise sauce. When you move elsewhere, say to New York, your view of the world will likely deepen, expand, diversify; you will notice that asparagus can also be green.

You will learn that asparagus is, in fact, always green, that white asparagus is manually ‘blanched,’ hidden in little mounds of earth as it grows to prevent the sun from wielding its photosynthetic magic. You will discover that green asparagus absolutely should be grilled on a barbecue as soon the weather permits, or braised with a little acidity in the oven on a wintry spring evening. And, indispensably, green asparagus must also be eaten raw, in a simple salad, just like this.

The tricky aspect is slicing the asparagus very thinly, lengthwise, so a good vegetable peeler is a must. My personal favorite is this kind.

Green asparagus, it should be very fresh and taut

Extra virgin olive oil

Freshly squeezed lemon juice

Good quality balsamic vinegar

Sea salt

Freshly ground black pepper

Chunk of parmiggiano reggiano cheese

Wash the asparagus. With a knife, cut off the tough end of the stalks (about 1 inch) and discard.

Cut off the asparagus heads and slice these lengthwise in halves or thirds (depending how thick they are). For the stalks, use the vegetable peeler to shave them into long strands, beginning at the thicker end.

In a serving bowl, toss the asparagus with some olive oil, lemon juice, a few drops balsamic vinegar, and salt and pepper.

Add coarse shavings of parmiggiano reggiano, and serve.

I could have spoken about rhubarb two months ago, when it first appeared at the market as the very welcome distraction from the last winter apples and pears; rhubarb makes those last few weeks before the first berries of summer bearable.

But it’s already the first week of summer, berries abound everywhere, and while I’ve eaten pounds of strawberries — plain, in tartes, or churned into ice cream — as well as raspberries and blueberries even, I am still craving — and eating — rhubarb.

Rhubarb is one of those vegetable that I cannot resist buying so it often ends up as compote (recipe below) because I’ve usually purchased it without a plan and compote only takes a few minutes to prepare. However the other day I felt an irresistible urge to make rhubarb ice cream. It was good beyond all expectations, and barely more work than a simple compote.

Rhubarb is technically a vegetable, though in our part of the world it is often used as a fruit, in crumbles and tarts. Wild rhubarb originated in Asia and its root has been used medicinally in China, Asia, and eventually Europe for thousands of years. But it was not until the nineteenth century that the stalks of rheum rhabarbarum were cultivated and used as a food, particularly in England and the United States, where rhubarb became known as “pie-plant.”

Rhubarb can be any shade of red or green, and while the red variety looks pretty, apparently there is no significant difference in taste. The stalks should be neither too big nor too small, always firm and crisp, not soft and flabby. Rhubarb is available from mid-spring through the summer. It thrives in cooler climates where the soil freezes in winter, which is another reason to love it — a delicious vegetable/fruit that grows best in my part of the world!

Rhubarb compote recipe

The quantities are an indication. The weight ratio of 1 part sugar for 4 parts rhubarb makes a compote that is not too sweet with a clear tart rhubarb taste. It can be adapted as desired. Serve with yogurt or crème fraîche, or with busy-day cupcakes.

3 1/2 cups (400 g) rhubarb cut into 1 inch (2.5 cm) pieces

1/2 cup (100 g) sugar

Cut off the ends of the rhubarb stalks as well as any parts that are bruised or blemished. Wash the stalks before cutting them into 1-inch (2.5 cm) pieces. (Now is a good time to measure the amount of rhubarb to calculate the amount of sugar needed.)

Place the cut rhubarb into a medium saucepan. Add 3 tablespoons of water, then the sugar. Bring to a boil and cook until all the pieces of rhubarb have become soft, about 12 to 15 minutes.

That’s it.

Lentil and fennel salad with lemon and parsley

I made this salad for Easter lunch on Sunday. I imagined it as I went. Or so I thought.

Many people liked it a lot, and one friend in particular complimented me on the originality of the pairing. I graciously accepted the comment, but all the while something in the back of my mind was nagging. Surely I had not really come up with the idea. I must have seen it somewhere. Speaking to my mother on the phone the next day I asked her about this salad. Had she not previously made something similar that might have half-consciously inspired me?

My mother is an incredible cook, and a nutritionist. Not a steamed-carrots-and-brown-rice kind of nutritionist. She loves good food, really good food. Meat, fish, vegetables, salads, desserts, and – yes – butter. She has written a few books about nutrition, one of which is a book of recipes. Sure enough, one of those recipes is a lentil salad with fennel, parsley, and coriander.

This lentil and fennel salad is different, but the inspiration – as it turns out and like so many other things in my life without my realizing it at first – is my mother’s.

1 cup green lentils (preferably Castelluccio or du Puy)

1 small red onion

2 bulbs fennel

A generous handful flat-leaved parsley

1 bay leaf

3 Tbsps good olive oil

2 Tbsps balsamic vinegar

Juice and zest from 1 lemon (more lemon juice may be required depending on how juicy it is)

Flaky sea salt and freshly ground black pepper

The lentils are cooked the same way as for this basic lentils recipe

Pick through the lentils to look for small stone intruders that must be discarded.

To wash lentils, cover with cold water and drain in a fine mesh sieve.

Peel and cut into large chunks the onion and half a fennel, reserving the rest of the fennel for later.

Place lentils into a medium-sized saucepan with 2 cups (double the volume) water. Add vegetable chunks, a few sprigs of parsley, and the bay leaf. Bring to a boil and let simmer, covered, for about 20-25 minutes. Remove from heat when the lentils are cooked to your liking – I like them to retain a nice bite. Discard sprigs of parsley and vegetable chunks, pour lentils into a large bowl, and place in the refrigerator for a few hours or overnight.

Wash and finely chop the rest of the parsley.

Cut the fennel in half. Place it face side down onto the cutting board, and cut into thin strips, height-wise.

Season the lentils with the olive oil, balsamic vinegar, lemon juice and zest, salt, and pepper. **The measurements given above are suggestions. I find that lentils hold up to a bold amount of acidity. It is best to season gradually, and adjust according to taste.**

Toss the lentils with the fennel and parsley. Check one last time for seasoning, adjust if necessary, and serve.

A few days ago “Spring has sprung!” was on everyone’s lips. It was irresistible, I even caught myself humming it. And I should know better. As long as I have lived in New York, spring has never sprung here. It fumbles, stumbles, advances two balmy afternoons, retreats five frigid days, and, just as winter finally seems to capitulate, spring gets bullied away by summer.

It was 20 degrees (Celsius, which is about 70°F) last Friday and we had our first picnic. Now it is raining, snowing, and hailing intermittently. It’s treacherous because the warm days are just enough to conjure visions of light dresses, and coax out the daffodils in the park and the chives on my balcony.

So as winter meets spring, and no one is quite sure which one it really is, I imagined a hybrid salad. The chives, shivering in the snow, were a nice way to springify the enormous beet salad I made to finish the last vegetables in the fridge before going off on holiday. Two weeks of skiing in the Haute Savoie, plenty of cheeses to eat and Abymes to drink. I will report back.

Whole raw beets

Flat-leaved parsley

Good olive oil

Juice from 1 lemon

Maldon sea salt

Freshly ground black pepper

Chives

Peel and grate the beets with the fine setting of a hand-held grater or food processor. Wash and finely chop the parsley.

Mix the beets with a generous douse of olive oil, freshly pressed lemon juice, salt, and pepper, checking the seasoning as you go and adjusting to taste. Mix in the parsley.

Roughly cut the chives into 1/2 inch (1 cm) pieces and toss into the salad.
