Brilliant spiced cauliflower

A recipe to arouse the taste buds amid the cloying seasonal onslaught of cookies and chocolate, Glühwein and Christmas punch. Cauliflower is a demure vegetable, and this method teases it from fading bystander to zesty leading lady.

I first tasted this elegantly spiced cauliflower at Newman Street Tavern a few weeks ago. It was so good, so unexpectedly addictive, that we asked for the recipe. More precisely, my friend asked, I didn’t exactly dare. What’s more, it wasn’t the first time that evening — the server had just brought from the kitchen the handwritten instructions for an incredible fennel and watercress soup. Asking for another recipe from that delicious meal was pushing it a bit far, surely? Or perhaps not. It was of course, evidence of our appreciation.

I had to extrapolate a little, especially for the spice mix, as there were no measurements. I’ve tested the recipe a couple of times and I believe this version comes close.

1 tsp cumin

1 tsp coriander seeds

1 tsp fennel seeds

1 star anise

2 tsps sweet paprika

1 1/2 tsp turmeric

1 pinch saffron threads

3 cloves garlic

3-inch piece of fresh ginger

Sea salt

Olive oil

1 medium onion

3 small tender celery stalks

1 cauliflower

Freshly ground black pepper

Sherry vinegar

Freshly squeezed lemon juice

Fresh dill and/or cilantro leaves

In a small skillet, gently toast the cumin, anise, coriander, fennel. Just enough to coax out the aroma (be careful not to burn the spices!). In a small blender, grind to a fine powder together with the turmeric, paprika, and saffron.

Crush the garlic and grate the ginger and mix into a paste with one teaspoon salt.

Peel and finely dice the onion. Cut the celery stalks into paper thin slices.

Wash and cut the cauliflower into small florets.

In a skillet large enough to fit all the cauliflower florets in one layer, heat enough olive oil to generously coat the pan. Throw in the spice mix and stir for a few seconds, then very quickly add the garlic/ginger paste. Cook for barely a minute then add the onion and celery. Add a little oil if necessary. **Again, be very careful not to burn the spices!**

Fry the onion and celery until translucent then add the cauliflower florets with a splash of water.

Cook for just a few minutes, until al dente.

To finish the dish, season with salt and pepper, a splash of sherry vinegar and squeeze of lemon juice. Garnish with plenty of dill and/or cilantro leaves.

Spicy lentil and red kuri squash soup

This is the soup you want to come home to if you’ve spent the afternoon outside and let dusk fall around you, the chill creeping until your cheeks are flushed and your fingertips frozen. If by any chance you’ve already cut the squash and prepared the cubes (undoubtedly the lengthier proposition in this recipe), the rest can be assembled fairly quickly.

The warmly spiced lentils and faintly sweet squash spring to life with a jolt of lemon, but what really makes the soup sing is the gremolata of parsley, lemon rind, and chili flakes. It is inspired by another incredible lentil soup I had at ABC Kitchen a couple of years ago. I kept note.

The soup

1 red kuri squash

1 cup French or Italian green lentils

3 small yellow onions

3 garlic cloves

A 2 x 1-inch piece of fresh ginger

Olive oil

Sea salt

Juice from 1 lemon

Peel and cut the squash into 1-inch (2.5 cm) pieces. Check lentils for small stones and wash in cold water. Peel and thinly slice the onions lengthwise (into half moons). Peel and finely chop the garlic and ginger.

In a heavy-bottomed soup pot, heat a couple tablespoons of olive oil. Add the onions and cook over medium heat, stirring regularly, until they become golden, about 7 to 10 minutes. Add the garlic, ginger, and a good pinch of salt, and cook for another 3 to 4 minutes, stirring often.

Now add the squash and cook for another few minutes, stirring often all the way to the bottom of the pan to mix everything well. Season with more salt.

Pour in the lentils, cover generously (by at least 1 inch or 2.5 cm) with water, and cook at a gentle simmer until the both the squash and lentils are just soft, approximately 25 minutes.

Pour in the lemon juice, starting with 1/2 lemon, testing for acidity, and add salt if needed.

Serve with a large spoonful of gremolata.

Handful parsley

Zest from 1 lemon

1/2 tsp Chili flakes

Excellent olive oil

Finely chop the parsley. Mix with the lemon zest, chili flakes, and just enough olive oil to coat.

It’s about how easy it is to make soup, or rather — and I may be the one here most surprised at reading this — how easy it is to make soup with broth, when no broth is around.

I’ve mentioned before how I like soups that don’t require the use of broth, and I have already surreptitiously written about at least four soups that don’t require any broth because — at the risk of repeating myself — I’d rather not use store-bought broth if I can help it, and chicken broth doesn’t usually last long in this house. But somehow I had disregarded vegetable broth.

This soup has taught me that I can make great vegetable broth at a moment’s notice, pretty much simultaneously to making the soup.

All the broth requires is a few vegetables roughly chopped into chunks, thrown into a large pot, and generously covered with water. This takes no time at all. Then as the broth simmers away happily on its own, there is plenty of time to to pour a glass of wine, peel and chop the vegetables destined for the soup, and sweat them in some oil for a little while. By the time the broth needs to be poured in, it is ready.

The broth

The vegetables and quantities below are indications. I used rutabaga for the first time in this broth and loved the depth of flavor, but it’s by no need obligatory.

4 celery ribs

2 medium carrots

2 medium onions

1 medium rutabaga

Olive oil

Few sprigs parsley

2 bay leaves

3 quarts (3 liters) water

Trim the celery stalks and wash off the dirt; trim and wash the carrots. Cut the vegetables roughly into 1/2 inch (1 cm) pieces. Wash and trim the rutabaga and cut into pieces approximately the same size. Peel the onions and cut each half in three.

In a large saucepan, heat the oil, add the vegetables, and cook over medium heat until they begin to soften, about 5 to 10 minutes.

Add the parsley and bay leaves, cover with 3 quarts (3 liters) water, and bring to a boil. Reduce the heat and simmer for about 40 minutes, skimming off the foam as it rises.

Drain the broth through a fine mesh sieve before using.

The soup

The soup should be very creamy, though it contains no cream (in fact it’s vegan unless using crème fraîche as garnish). The key is to blend it thoroughly (a good 4 to 5 minutes) until it becomes perfectly smooth and velvety.

It is liberally adapted from the pumpkin, butternut squash, and parsnip soup in The New Low-Country Cooking by Marvin Woods.

2 medium onions

2 carrots

3 leeks

6 parsnips

1/2 butternut squash

Olive oil

2 quarts (2 liters) vegetable broth (recipe above)

Small handful fresh sage leaves

Sea salt, freshly ground black pepper

Freshly grated nutmeg

Crème fraîche, pumpkin seed oil, and more sage leaves to garnish (either one of these or all three – optional)

Peel, wash, and coarsely chop the onions, carrots, leeks, parsnips, and the butternut squash.

In a large soup pot, heat enough olive oil to cover the bottom of the pot. Add the onions and cook until they softens, stirring occasionally – about 10 minutes. Then add the leeks and the carrots. Cook, stirring occasionally, about 10 minutes longer. Add the parsnips for another 5 minutes, then the butternut squash.

Add enough hot vegetable broth to cover the vegetables by a good inch. Once the soup simmers, cook for about 30 to 40 minutes, until all the vegetables are soft.

Finely chop the sage leaves.

In batches, scoop the vegetables and most of the broth as well as the sage into a food processor or blender (fill it up to only about 2/3 and hold the lid down tightly, or the steam released will make it pop up). **Do not pour in all the broth with the vegetables, keep some to adjust the consistency of the soup once everything is blended.**

Season with salt, pepper, and a little freshly grated nutmeg.

Serve garnished with crème fraîche and pumpkin seed oil, and a few sage leaves fried for 1 or 2 minutes in a little olive oil.

I made this salad for Easter lunch on Sunday. I imagined it as I went. Or so I thought.

Many people liked it a lot, and one friend in particular complimented me on the originality of the pairing. I graciously accepted the comment, but all the while something in the back of my mind was nagging. Surely I had not really come up with the idea. I must have seen it somewhere. Speaking to my mother on the phone the next day I asked her about this salad. Had she not previously made something similar that might have half-consciously inspired me?

My mother is an incredible cook, and a nutritionist. Not a steamed-carrots-and-brown-rice kind of nutritionist. She loves good food, really good food. Meat, fish, vegetables, salads, desserts, and – yes – butter. She has written a few books about nutrition, one of which is a book of recipes. Sure enough, one of those recipes is a lentil salad with fennel, parsley, and coriander.

This lentil and fennel salad is different, but the inspiration – as it turns out and like so many other things in my life without my realizing it at first – is my mother’s.

1 cup green lentils (preferably Castelluccio or du Puy)

1 small red onion

2 bulbs fennel

A generous handful flat-leaved parsley

1 bay leaf

3 Tbsps good olive oil

2 Tbsps balsamic vinegar

Juice and zest from 1 lemon (more lemon juice may be required depending on how juicy it is)

Flaky sea salt and freshly ground black pepper

The lentils are cooked the same way as for this basic lentils recipe

Pick through the lentils to look for small stone intruders that must be discarded.

To wash lentils, cover with cold water and drain in a fine mesh sieve.

Peel and cut into large chunks the onion and half a fennel, reserving the rest of the fennel for later.

Place lentils into a medium-sized saucepan with 2 cups (double the volume) water. Add vegetable chunks, a few sprigs of parsley, and the bay leaf. Bring to a boil and let simmer, covered, for about 20-25 minutes. Remove from heat when the lentils are cooked to your liking – I like them to retain a nice bite. Discard sprigs of parsley and vegetable chunks, pour lentils into a large bowl, and place in the refrigerator for a few hours or overnight.

Wash and finely chop the rest of the parsley.

Cut the fennel in half. Place it face side down onto the cutting board, and cut into thin strips, height-wise.

Season the lentils with the olive oil, balsamic vinegar, lemon juice and zest, salt, and pepper. **The measurements given above are suggestions. I find that lentils hold up to a bold amount of acidity. It is best to season gradually, and adjust according to taste.**

Toss the lentils with the fennel and parsley. Check one last time for seasoning, adjust if necessary, and serve.

A few days ago “Spring has sprung!” was on everyone’s lips. It was irresistible, I even caught myself humming it. And I should know better. As long as I have lived in New York, spring has never sprung here. It fumbles, stumbles, advances two balmy afternoons, retreats five frigid days, and, just as winter finally seems to capitulate, spring gets bullied away by summer.

It was 20 degrees (Celsius, which is about 70°F) last Friday and we had our first picnic. Now it is raining, snowing, and hailing intermittently. It’s treacherous because the warm days are just enough to conjure visions of light dresses, and coax out the daffodils in the park and the chives on my balcony.

So as winter meets spring, and no one is quite sure which one it really is, I imagined a hybrid salad. The chives, shivering in the snow, were a nice way to springify the enormous beet salad I made to finish the last vegetables in the fridge before going off on holiday. Two weeks of skiing in the Haute Savoie, plenty of cheeses to eat and Abymes to drink. I will report back.

Whole raw beets

Flat-leaved parsley

Good olive oil

Juice from 1 lemon

Maldon sea salt

Freshly ground black pepper

Chives

Peel and grate the beets with the fine setting of a hand-held grater or food processor. Wash and finely chop the parsley.

Mix the beets with a generous douse of olive oil, freshly pressed lemon juice, salt, and pepper, checking the seasoning as you go and adjusting to taste. Mix in the parsley.

Roughly cut the chives into 1/2 inch (1 cm) pieces and toss into the salad.
